Gluten-Free Breakfast Crêpe

This recipe pertains to the crêpe and not the fillings, but the options are endless. Above I added greek yogurt, banana slices, sautéed cinnamon apple slices and almonds. For a dessert you could add some coconut ice-cream and berries but if you're looking for a savory spin > Click here.

Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

2 tablespoons coconut flour
1 tablespoon
1/4 teaspoon salt
2 eggs
1/2 cup water
1/2 tsp baking powder
1 tablespoon melted coconut oll
1/2 tbsp honey (optional)

Mix wet ingredients together
Mix dry ingredients together
Then mix both mixtures together and let sit for about 10 minutes, the mixture should thicken a bit.
Heat pan to a lower medium heat
Spray pan with oil
Once heated, add 1/4 cup of the mixture to the pan, let cook about 3 minutes and then flip
Repeat with the remaining batter.
