Quick Pickled Radishes & Carrots

Summer is speeding by and my trip to Greece is right around the corner! In just a few days I will be saying farewell to Miami for a couple of months and well the truth is... I have a lot of veggies in my fridge still! Im totally against waisting so I will be giving them to friends. However, I saved the carrots, radishes and red onions for some quick pickling! 

I used my savvy kitchen tool, the mandoline to make thin slices of the veggies but a chefs knife would do the trick as well! The thinner you slice your veggies, the quicker they will soak up the delicious flavors in your jar! 

I especially like to quick pickle because your veggies are pretty much ready right after you finished the process of letting them cool. This condiment is becoming a staple in my diet because its an easy and healthy way to add flavor and spice up my meals! You can add the "pickles" to salad, chicken, fish, tacos, burgers, toast, sandwiches or whatever your heart may desire!

1 bunch radishes sliced
2 large whole carrots sliced
1/2 red onion sliced
1/2 cup red wine vinegar
1/4 cup apple cider vinegar
1/2 cup water
3 tablespoons honey or maple syrup
1/2 cup cilantro
2 teaspoons salt
2 garlic cloves minced
1-2 tbsp black peppercorns


To prepare the vegetables: Slice off the tops and bottoms, then use a sharp chef's knife or mandoline to slice the vegetables into very thin rounds. Pack the rounds into a pint-sized canning jar along with cilantro. 
To prepare the brine: In a small saucepan, combine the vinegar, water, honey or maple syrup and salt. Bring the mixture to a boil, stirring occasionally, then pour the mixture over the veggies.
Let the mixture cool to room temperature. You can serve the pickles immediately or cover and refrigerate for later consumption. The pickles will keep well in the refrigerator for several weeks, although they are in their most fresh and crisp state for about 5 days after pickling.
